We've been trying to give you a more detailed portrait of Sullivans Cove of late, so we caught up with Pat to talk about the history of Tasmanian distilling, whisky prices, native grains and how he sees the Australian industry progressing.

After a long time between visits, Ev Liong takes a second look at Hellyers Road, the somewhat polarising Tassie whisky that now releases some of Australia's oldest single malts. 

Ev tastes the Hellyers Road Original, the Peated, the 15 yr and 15 yr Slightly Peated, two Pinot Noir finishes, including the recent 16 yr old bottled by The Whisky Club, and the monster single cask Masters Series 14 yr old.

Instagram post 17866291997342312 Sullivans Cove whisky review: ‘TD’ to now. Following the announcement that Sullivans is shifting locations and returning to the cove, it’s the perfect time to take a look at how the whisky has evolved from the ‘TD’ era (Tasmania Distillery) to now. 

We’re tasting through the American Oak TD0001 and TD0165, the refill cask 14 year old and Special Cask 7th Edition, and modern bottlings of the French Oak and much improved Double Cask.
