Instagram post 17870827385240401 Sullivans Cove review: Highland Holdings and the early years. Unpacking Sullivans Cove's history is not a simple task. The distillery that was founded by Robert Hosken in 1994 at Hobart's old Gasworks is so far removed from the current era of the brand that it’s often easier to pretend it never happened.

But now, we’re finally having a proper look at the world-beating single malt and its complicated past.

The Oz Whisky Review team have been fortunate to try hundreds of Sullivans Cove whiskies over the years. So with this review, the first of three on Sullivans we’ll publish in coming weeks, we wanted to explore whiskies distilled during the Highland Holdings (‘HH’) ownership, and just before, in the case of the Millennium Gold – now a unicorn bottling.

We’re also looking at two American oak cask strengths (HH0200 and HH0270) and a 17 year old (HH0481); a French oak cask strength (HH0511) and 16 year old (HH0516), and an older bottling of the Double Cask (DC072).

The state-of-the-art maltings, adventure park and hospitality space has set out to transform the way Australian distillers and brewers use grains and malts. But if you’re partial to a spot of lake golf, Murray Cod fishing and dining out on delicious local produce, they’ve got that covered, too! If you're a whisky and beer fan, it’s time for a road trip. Instagram post 17865752585208131 Whisky review: first release malts from The Aisling Distillery in Griffith and Headlands Distilling Co. in Wollongong. Two very different places making whiskies that share some commonalities. Both distilleries use local barley, both mature their whiskies for similar periods, and all the whiskies reviewed here spent time in casks that once held quality Aussie fortifieds. And yet, the results are very different. Link in bio for the full review.

Instagram post 18083146654236552 A behind-the-scenes tour of Archie Rose's groundbreaking new distillery. This epic site, and the controversial patent that's been applied to its whisky making technique, has ignited one of the most heated arguments in Australian whisky in decades. Here we take you inside the distillery for the lowdown on just how significant this operation might become for whisky and spirits production in Australia. Link in bio for the article.

Instagram post 18137000347138994 Whisky review: the Starward Projects. If you’ve only tried the affordable core range malts, there’s more to the story. Starward’s project bottlings show how the Australian industry’s most widely consumed single malt has evolved over the years. From seriously experimental one-off releases to the more mature recent bottlings, we’re tasting the old and the new: Dolce, Tawny, Ginger Beer and Bourbon Cask, to the First Distillery Last Release and an old school @yalumbawine cask special.
