Review: Bakery Hill Metamorphosis Peated Muscat Cask

The latest seasonal release from Bakery Hill Distillery. Here, a muscat cask from a Yarra Valley winery was used to finish the distillery’s renowned ex-Bourbon cask matured peated malt whisky. Love the bottle design.

    • Production Story: Distilled 11 November 2014 at Bakery Hill Distillery from lightly peated Scottish malt. Initially matured in ex-Bourbon casks for six years before being finished for a further two years in French oak ex-muscat casks. Released June 2023. 280 bottles in total.

    Nose
    Oddly sweet to start. Sultanas, dried cranberries, white grapes and orange cake. Then the ash, charcoal and beef brisket from the peated malt kicks in. Interesting clash of flavours.
    Palate
    Much better here. The malt and peat add a smoky, saline and slightly meaty structure which gives the raisiny, banoffee sweetness from the muscat a bridge to walk on. Nowhere near as rich and wine-laden as other Aussie malts in this style. This is more floral and lifted.
    Finish
    Really kicks on. Earthy, vanilla cake and botrytis riesling. Spot on bottling strength.
    Comments
    This is a great package. The muscat cask influence isn’t as heavy and thick as you might expect. It's sweet and rich for sure, but more perfumed and fragrant. It works because there's a solid, well matured smoky base underneath it all.
